Vegan Minestrone Soup: Fixings: 2 tablespoons olive oil 1 onion, slashed 2 carrots, diced 2 celery stems, diced 3 cloves garlic, minced 1 zucchini, diced 1 cup green beans, cut into reduced down pieces 1 can (14 oz) diced tomatoes 1 can (15 oz) kidney beans, depleted and flushed 1/2 cup little pasta (like elbow or little shells) 6 cups vegetable stock 1 teaspoon dried oregano 1 teaspoon dried basil 1/2 teaspoon dried thyme Salt and pepper to taste Parmesan cheddar (discretionary, for serving) New basil or parsley, slashed (discretionary, for decorate) Directions: Heat olive oil in a huge pot over medium intensity. Add hacked onions, carrots, and celery. Sauté until the vegetables are mellowed, around 5-7 minutes. Add minced garlic and sauté for an extra 1-2 minutes until fragrant.
